Rice-a-Roni to the rescue!

I cooked up some pork chops the other night. My daughter wanted spaghetti and had bought some canned sauce, so I thought both together would work. She didn't. She loves pork chops, but was grossed out by having tomato sauce with them. So, I cooked three, but only one was eaten. She didn't take the unsauced chop to work, so I ate that the next day. That left the one chop with spaghetti sauce on it. Last night I was super hungry, but I didn't want to eat just that pork chop. But, I thought maybe if I diced it into small pieces, I could add it to one of the many noodle mixes we had on hand for a semi-full meal. All but one of them was chicken flavored and that one was broccoli, which is her favorite, so I opted out of the noodles. Then I saw the boxes of Rice-a-Roni and pulled them out. Two Spanish Rice and one Broccoli au Gratin. I thought Spanish Rice would be perfect, but it required the addition of tomatoes. I just wasn't feeling tomato-y. The broccoli one, though, only required butter and water. SCORE!! I diced up that chop and made the rice (used olive oil instead of butter) and was perfectly happy. I even had enough leftover to make breakfast today. More on that later.
