What are the Staple Spices in your Kitchen?

Hello guys! It is quarter past eleven in the evening now at my end. I just finished preparing the ingredients for our breakfast and lunch for tomorrow. It's holiday,Buddha's birthday, here in Korea tomorrow, I told my husband that we should just stay home . I am sure,parks will be jam-packed because of the holiday. I will just cook Kalbi-jim (beef short ribs) and pasta for tomorrow. I bought spices yesterday like paprika,rosemary, rubbed oregano,white pepper powder, dried bay leaves, and parsley. I have been looking for cumin but it is hard to find it here.I am not going to use all of these for my dishes tomorrow.I just want to stock spices because my mother-in-law has very basic staples,like sea salt , black pepper and red chili pepper powder which I hardly use because MIL cannot tolerate spicy food. I wanted to buy cumin. I have checked three groceries and still haven't found one. What else do you think should I add ? What kind of spices do you have at home?

I have many (REALLY MANY) spices at home, cumin is one of them, black, red and white pepper, paprika, cinnamon, some fresh, like oregano, thyme, mint, coriander, sage, chili peppers. I also keep different kind of salt, raw sea salt, kosher salt, Himalayan pink salt and Persian blue salt.

@Iam_jauntyjen A little bit of salt is good even for toddlers, a lot better than sweets and sodas, this is sure.

@LadyDuck oh goodness my daughter likes sweets. I did not intend to introduce sweets to my daughter but the people around us,especially my mother used to buy chocolates and chocofilled cookies for my daugher.

I heard that pink salt has a lot of health benefits. But I am having second thoughts on buying it .I try to avoid putting salt in most of the dishes I cook because of my toddler.

@Iam_jauntyjen I cook many sauces with tomato. To many of them I add oregano. I also use it over a sort of pizzas made with bread, cheese, a slice of tomato and oregano on top. It is a wonderful brunch.

Which dish do you usually use oregano? So far, I have only used it for fried chicken.

@marguicha oh yes oregano makes pizza taste good. This morning, I made pizza out of scratch, the first batch that I prepared tastes a bit bland. So, I tried to add organo and white pepper to the next batch and indeed it tastes better.

Just basic spices here. Probably salt and black pepper and cumin. We do add fresh congo peppers to give slight taste to our foods. I really don't know much about spices and even avoid experimenting too.

@Iam_jauntyjen Very hot. And when they are not watered, they are even hotter. Even half a teaspoon will cause your food to be extra hot. Off course there are the exceptional people who eat this raw and 2 or 3 in one sitting. We use 3 peppers for the month, using tiny pieces each day.

I have 63 of them, and I do believe that I need more I have different kinds of Armenian, Russian, Indian, Georgian spices and herbs. If you want to have only the most necessary ones, I would add Provencal herbs to your list

Coincidentally, I do have cumin (ground cumin) at home. And curry. And saffron (does that count as a spice), black pepper, sea salt, oregano, pimento, hot pepper... I cannot cook without spice.

@Iam_jauntyjen here's a recipe, though they used turmeric instead of saffron. If you ever try it, dhal is quite delicious actually.
Personally I find this a bit bland but it is a traditional comfort food for my DH. He loves this with plain rice and fried fish or as a soup on its own. If made without pepper, I find it to be a useful side dish to a very hot spicy curry.

I use red pepper and garlic powder sometimes and really I use green and red peppers the fresh ones most of the time. Black pepper is a favourite also. I also like parsley.

i thought korean dishes were spicy. have you tried searching online, not to buy online, but just to know which groceries/markets carry them? or maybe specialty/niche stores?

Not all Korean dishes are spicy. In fact, my husband and Mother-in-law do not eat spicy food. Red chili pepper flakes is the most commonly used spice here.

I have the Mrs. Dash seasonings, as they are a salt substitute. So garlic and herb, and onion and herb are my two go-two spices. Also the lemon pepper, and the fiesta lime, which I happen to be out of at the moment and the store didn't have any that I went to today.

@Iam_jauntyjen Once my parents' house is fully renovated, I will try my hands at cooking, NJ. I would like to continue cooking pasta and perhaps baking too.
