Warming up to turkey bacon

Interestingly, turkey bacon is made out of chicken thighs so it has no turkey meat in it at all. A coworker of mine who also lifts heavy told me that she loves it so I decided to try it. I wasn't a fan at first but now I'm warming up to it. It ISN'T bacon, but as long as you know that going in, it really isn't bad.
That being said, it is obviously a highly processed food (just *how* do you turn chicken thighs into something that fries up almost like bacon?) so it isn't an item that I want to eat often. As I would say to my students, "where is the bacon (pork belly) on the chicken?"
I cooked up some tonight to have with my hardboiled eggs for the next 2 mornings. My husband came in and asked what I was cooking. He was then HORRIFIED when I told him.

@JolietJake I got it from reading all of the packages at the grocery store. It was all made from chicken thighs and my options were cured or uncured. I went with uncured.

Then why do they call it turkey bacon? I thought it was supposed to be healthier than regular bacon.
