Just heard on the radio that it's day one of the Toronto Poutine Fest ( four days, 50 varieties of "gourmet" poutine. Who could ask for more?

Is there something like a "gourmet" poutine ? Mixing french fries with cheddar and a sauce looks dubious to my French palate, even if you add to it truffles and caviar.
