My dinner tonight

I had half of a small ham steak, some mashed butternut squash, and garlic green beans. I could have had a baked potato or some of the leftover mashed potatoes that I have in the fridge, but I opted to skip white starch for this meal though we are encouraged to have it after a workout. My main point in posting this picture, though, is to show the proportion of green vegetable on the plate compared to the rest. It is about half. Most Americans don't eat nearly enough green vegetables, if they eat them at all. It is disgraceful. And we wonder why this country has so many health problems, an obesity issue, etc? Did you have a green vegetable with dinner tonight? What was it?

That's a really good dinner you have there. My dinner last night was jjust plain hotdog sandwhich.

I'm really guilty when it comes to green vegetables. No, no veggies last night of any kind. I had sloppy joes over baked potatoes.

@NJChicaa I know I need to eat more vegetables. I never liked them as a kid, and they were never a real part of any meal even with my kids. Though I did make vegetables on occasion. Mostly green beans and corn. Broccoli also became big on our table once I tried it and found I liked it. I eat more fruit than anything else.

I try to make at least 1 green veg for each dinner. I mix them into my scrambled eggs for breakfast too.

@just4him I don't eat much fruit due to the calorie/sugar content. I tend to go through the same group of vegetables that I like--green beans, baby spinach, broccoli, and cauliflower--as sides. Occasionally I'll try to sneak brussels sprouts or eggplant past my husband. I do make cucumbers/onions marinated in balsamic vinegar often in the summer as well. Some weeks I do green salads loaded with veggies and chicken for my work lunches. That's another great way for me to get some veg in. I will put fresh pico de gallo (salsa) on my scrambled eggs with half an avocado sliced up in the morning. I do what I can to get it in.

Yes I did, Broccoli. See I am one of hose people who will eat a green each day. Yesterday ir was lettuce in a salad, the day before it was kale. I am not skinny but I am not fat either. I have a lot of muscle and can out work most men, sorry to brag but what the hell?

Yes, I ate spinach, eggplant and beef at night. I always eat vegetables with beef.

With my diabetic food plan, 1/2 my plate should have green vegetables, a medium portion of lean meat, and a small serving of carbohydrate, such as butternut squash. Your plate is a perfect example of a low-carb meal! :) We had great northern bean soup over corn-bread tonight.

Um, that is NOT so low-carb. My weight does best when I limit carbs. The mashed butternut squash was pre-made and frozen (Alexia brand) but I bought pre-peeled and chunked cubes of butternut squash today so I can make it myself next week. I really enjoyed it! I could definitely sub that for mashed potatoes EASILY!
