Hello everyone. I hope your day is starting well. It is cold and cloudy here at the Jersey Shore with a current temperature of 60 degrees F. The beach-goers are not going to be happy. . . again. That is a shame because so many people drive a long way and pay a lot of money to spend the holiday weekend here. I went to bed early last night which turned out to be a good thing because the bad orange cat woke me up pretty much every hour on the hour starting at 2 am. I have no idea what his problem was because the food and water bowls were filled. I never got around to making the amazing dinner I had planned so that will be what we have tonight. I'm making huevos rancheros for my breakfast this morning since I'm pretty hungry at the moment. I'm following a recipe from the Margaritaville cookbook and that requires a recipe for "Fajita Black Beans" so the black beans are currently cooking. They will be ready in 15 minutes and then I can get working on the eggs. I'm enjoying a cup of coffee in the mean time. Today my husband and I are going to Lowes to get some blue tape so he can tape off where he needs to paint the trim. I am going to get plants for my vegetable garden. I'm late doing it again this year but hopefully I'll get something out of it. Aside from that, the plan for me is like any other "Sunday"--meal prep work week lunches, laundry, and cook. What's everyone else up to today?
