June Crockpot Recipe Report Card

Happy 4th of July to my American Mylot friends. Better late than never on last month's recipe record, since I've been finalizing my list of recipes to start this weekend, after I try Curbside Express tomorrow for my big grocery list. I also have been running around my apartment, getting it ready and cleaned for my cousin's visit later this today. Overall, June was a pretty good cooking and slow cooking month for me. Even my redemption recipes came out pretty darn good, too. As for my reserve recipe, I had to scrap it, since I've contacted the company who made the frozen stuffed tilapia. They said that product has been discontinued. At least I know why I couldn't find it at my local Walmart. 1. Simple Macaroni--A-. Delicious around with one helping of leftovers. Though I had ran out of cheddar cheese, I had to "cheat" by adding some cheese sauce to the dish, when some of my cheese coating didn't come out all right. I made do with it the best I could. 2. Crockpot Caramel Pecan Rolls--A+. I've made six rolls in my small crockpot. Real easy to make, delicious to eat, though it did crumble when I try to scoop it out of my crockpot. I snacked it on it and had it for after breakfast last week. 3. Crockpot Squash and Cheese--A-. A real easy side dish to make. Though I didn't have any heavy cream, it tasted fine without it. On the plus side, since I've used a third of my spaghetti squash to fit inside my crockpot, I have enough squash to use for future meals. Its in my freezer. 4. White Pizza x2--A-. This time, I had shaped my pizza into an oval instead of a circle. I just forgot to to toss it around to shape it out. But I did have one round of leftovers, though my crust came out doughy. Maybe third time would be the charm at another time to try it again and get it right. 5. Turkey/Chicken Textrazzini Deluxe-A+. Although the recipe called for using turkey breast, I've used chicken this time around. Like the original recipe I made in May to cook it in a crockpot, this was straight out in the pot. Between the two, both tasted real god--leftovers was another hit with me. 6. Pasta with Tuna Sauce--A+. A simple delicious pasta dish to cook on a Friday night. I've made enough for one helping and had no leftovers. I did like the tuna with the pasta. 7. Crockpot Brownie S'Mores-A+. This was a fantastic and delicious dessert to make it in less than 3 hours. Though I'm not a big fan of marshmallow creme, it did make it taste better and like S'Mores. I had 2 rounds of leftovers from one batch of brownies. 8. Randy Slow Cooker Lasagna Ravioli x2--A+. This came out so much better than it did last time--nothing was burnt, plenty of sauce to go around. And yes I did have enough for leftovers. Another successful redemption recipe in my book. 9. Sesame Seared Tuna--A-. Although I didn't have the Japanese wine and the wasabe paste that the recipe called for, it tasted real good, though my sesame seeds didn't stick to the tuna too well. No leftovers. 10. Hawaiian Fish-A+. A simple and fulfilling seafood dish to have at any night. No leftovers. 11. Crockpot Chicken Parmesan Casserole--A+. Between the original in the oven and now in the crockpot, both dishes were equally dishes. The twist was to add the breading coating at the end and on top of the chicken. Leftovers was another hit for a second helping. 12. Taco Pasta-A. Although this wasn't too bad, the spiciness was a bit hot with the taco seasoning mix. But I toned it down with sour cream, like I did with the two turkey chili dishes I've made earlier this year. Leftovers weren't so bad. 13. Garlic Shrimp Pasta--A+. I've made this dish last Friday night. It took me less than 20 minutes to make it tops. The shrimp and the pasta made an awesome pair to combine together. No leftovers. 14A and B. Rustic Italian Chicken with Roasted Parmesan-Rosemary Potatoes-A+ for both. I've made these dishes last week before I had my cortisone shot. I've made the potatoes the day before and reheated it in the microwave. I've also prepped the veggies for the dish the day before to save me some time. They've worked together between main dish and side dish. Both dishes were easy to make with delicious flavors to keep me full. And yes I had plenty enough for leftovers last week too. 15. Lazy Chicken Alfredo--A+. Real easy to make to throw together and let it cook on any night. Leftovers were amazingly scrumptious to eat. 16. Crockpot Creamy Chicken Fajita Bowls--A-. Yet again, it was a bit spicy with the fajita mix, but it wasn't a bad meal. I did tone it down with the sour cream which helped a bit. Leftovers were good as well. 17. Crockpot Rocky Road Chocolate Cake--A+. Though I didn't have any vanilla ice cream, it tasted real well without it. I've made enough to have two rounds of leftovers. I did forget to add the toppings before the cake stands uncovered, so I had to add some extra time to make the mini marshmallows start to melt a bit. I didn't mind the mini marshmallows either. Now here's my list of crockpot and regular pot recipes for this month, starting this weekend. Via my library's Libby app (I'll do a post on it this weekend), I've got some recipes from Taste at Home Magazine to try this month. 1. Crockpot Cheesy Veggies (Recipes that Crock)--An easy side dish to add to any meal. 2. Utoka's Pecan and Coconut Coated Fish (All Recipes)--I've been literally dying to try to recipe out every since I saved it on the website. 3. Seattle Cream Cheese Dog (All Recipes July edition magazine)--Perfect time of the year to try something new to an old classic hot dog. 4. Easy Sweet and Sour Meatballs (Taste of Home Magazine)--This looks simply enough to add to rice or pasta. 5. Hearty Summer Pasta Salad (FoodNetwork.com)--Too hot for soups this month, so I'm doing a lot of salad dishes. This is an easy one to make and the only one I'm doing from the website. 6. Crockpot Poppy Seed Chicken (Recipes that Crock)--This is an interesting dish, though I'm not a big poppy seed fan. 7. BLT Pasta Salad (All Recipes Magazine)---This pasta salad as a BLT twist. 8. Strawberry Spinach Salad (All Recipes Magazine)--I love strawberries. This salad looks amazing with so many flavors. 9. Breaded Turkey Breast (Taste at Home)--A simple and healthy dish to make with any side dish. 10. California Chicken Spaghetti (All Recipes)--The name said it all to make and give it a try. 11. Chicken Cucumber Pitas (Taste at Home)-- Real easy to make and put together in so little time. I haven't had pitas in a long time. 12. Crockpot BBQ Chicken Wraps (Recipes that Crock)--An interesting dish to make on a summer night. 13. Crockpot German Potato Salad (Recipes that Crock)---It doesn't hurt to try something new. 14. Chicken and Broccoli Alfredo (All Recipes)--The best of both worlds in one dish. So that's what I'm having this month on the menu. How about you?

Oh wow. I'm impressed. I love crock pot too. But my goal is a measly 2 new recipes a month. You are inspiring me

I have to admit the strawberry spinach salad in the crockpot sounds really different. I should use my crockpot more. The Hawaiian fish sounds interesting to me.

Yeah it does. If you want the recipe for the salad let me know. Yeah it was an easy dish for mahi-mahi with few ingredients.

That's a lot of crockpoting you've done. I love my crockpot too but haven't experimented with as many recipes as you have.
