Getting "authentic" ingredients for recipes

I was reading a discussion on another board about how important it is to chase down authentic, premium ingredients for recipes. I figured that many people would say, yes, it absolutely was. Interestingly, so far more people have been on the side of saying that they don't think it is critical and/or that they usually don't bother. For me, it isn't always possible to obtain specialty items in this area. We have well-stocked grocery stores but no real gourmet food shops like cheese stores or spice shops. There are Mexican food shops and an Asian one. I've had to order spices and dried peppers online before. Some things I've had to find substitutions for or do without entirely. I don't feel like a failure as a cook because I won't spend a day driving all over the state trying to source an obscure thing to make a dish. That isn't what cooking is all about to me. It was nice to see that I am not the only one on that side of the discussion.

I try to come as close as I can to authentic, but I will not overwhelm myself with it. A recipe is guidelines more than rules.

In this matter we Indians are very lucky that we get raw and genuine spices in the market very commonly! Though there can be adulteration at some small places but authenticity is always maintained by the customer as they know the genuine ones from the adulterated or fake!

Yes you are lucky. We can get a lot of things here but some aren't so easy. I had to order za'atar online yesterday because the local grocery store didn't carry it.

@NJChicaa , yes since most of the spices they are grown locally we don't have that problem! Do you have only one grocery store nearby?

We are blessed to have a lot of ethnic stores in the Strip District and if they don't have it they are usually more than happy to order it from a 'real' vendor

This area is incredibly devoid of good restaurants and specialty food stores. Riddle me THAT for the most densely populated state in the country and a huge tourist destination. We pretty much have Olive Garden, Fridays, Chilis, Red Lobster, and Applebees to choose from when out and about if we decide we need a quick meal. (which is why we decide we never do)

I don't feel bad at all having to improvise when it comes to recipes. If I can find that special ingredient, great and if I can't I either do without or find something that will work.

I do too but sometimes I want to try a new recipe and it calls for something I don't have already.

I’ve read about papaya seeds being used as peppercorns to cheat customers. Be careful.
