I prefer cheddar cheese, the sharper the better, either with apple pie or on a Ritz. But some prefer American on white bread, fried with butter, in an iron skillet. The pros of cheddar cheese. 1. Cheddar cheese is sharper than ordinary American cheese. 2. Cheddar cheese is firmer and more bold tasting than American cheese. 3. Cheddar cheese is very bright orange in color in contrast to a head of green lettuce. The cons of cheddar cheese. 1. Some think it is a bit too intense a flavor. 2. You can have cheddar cheese on crackers but too much might give you a headache. 3. Cheddar cheese is more expensive than American cheese. But, then again, what is so bad about good old American cheese anyway? American cheese is more versatile in the number of recipes it can be used in. And for that matter I like cheddar cheese on nachos but I like American cheese on a grilled cheese sandwich even more.
