I use ginger in several dishes that I prepare, I have a ginger garlic paste that goes into many dishes. But most important of all the bell fruit juice I prepare has it and that makes a huge difference to that juice. Mother used to prepare ginger preserve from tender ginger. It is a long drawn process. The skin had to be scraped off, and the ginger soaked in water for three days after pricking it with a fork all ovedr to remove its hotness. It is then cooked in sugar. This would be then stored in bottles There is a syrup I prepare with just sugar and ginger which I pour on appams that I make. The flavour of ginger whets my appetite.

I love ginger! I put fresh grated ginger in my milk tea every morning. I think it keep me from catching cold.

@allknowing I don't like eating ginger. Ginger is added to add flavor when cooking. When I eat, I pick out the ginger and throw it away.

Although not my favorite spice, but I do consume it when used in moderation. I have seen a lot of dishes that uses a lot of this and somehow is not delicious for me. Maybe my native palate for this spice is not that strong.

I do like the flavor of ginger. But, as you said it can give a hot flavor if I use too much. I love ginger snap cookies!

Ginger snap cookies is new to me There used to be biscuits with a ginger flavour. I do not find them these days unless I search for them on the Net.

Ginger has a lot of health benefits and there is always some in my kitchen. Anyway I remember it best at Christmastime. Back in my homeland Guyana homemade gingerbeer was a must during the Christmas season.
