Braised Chicken Breasts Tonight And Here's How

I cook to eat good food, but I also cook to save money and use up whatever I can to the utmost. Therefore, tonight I am making braised boneless, skinless chicken breast. I had a little bit of Italian dressing left over and so I doused my chicken breasts with some of that. Then I did a very simple seasoning of salt, pepper, garlic powder, and onion powder on both sides. I let it "marinate" for about 10 minutes. Then it is off to the deep frying pan to brown for about 4 minutes on each side. Meanwhile I took some chicken broth and added it into my bottle of Italian salad dressing and shook it up. That's my braising sauce. That gets every single ounce of salad dressing out of that bottle. Once the browning of the chicken breasts was done, I poured into the pan the mixture of chicken broth and salad dressing and will cook that on very low heat for about an hour. Voila! Juicy, tender chicken breasts that are loaded with flavor, and that my friends, is dinner. By the way, the chicken breasts in the picture is NOT tonight's meal, but a picture I took a while back of a grilled chicken breast dish I made. I was just too lazy to take a new picture, and I am sure you know what chicken looks like.

That sounds really nice. We eat a lot of chicken and quite a bit of pork. They are the cheapest meats here.

@JohnRoberts Lamb doesn't seem to be eaten much in the US. It's pretty dear here. I think we export most of our lamb.

Same here. Chicken and pork are more affordable than beef.

yummy. sounds like the way i used to cook. my daughter seems to think you have have things just so or you can't cook certain things. i don't know where she got that from because i always cooked what we had and made due and made it work. even when others thought oh, thats not going to work, it was delicious

@porwest thats true. i used to make fantastic biscuits for bread every morning and evening but could not write it down nor tell anyone else because basicly it was a feel type thing. even when i did show them or try and write it, they still could not do it the same and my mother in law at the time accused me of holding something secret

Sometimes the best meals are experiments. Granted, you have to know what goes well with what. But its the way I mostly cook. From the mind, from the heart, and just knowing what goes good with what. I rarely write things down which is sometimes a bad thing because repeating what you did is really difficult.

ha I was confused how braised chicken got grill marks. Batali's stuffed meatloaf here--stuffed with baby spinach, baby carrots, proscuitto, and mozzarella.
