I peeled and sliced all the cucumbers and layered them with sliced yellow onions. Salted lightly and drenched with a little white wine vinegar. These will be yummy tomorrow. Great summer food. Do you peel your cucumbers. Hubby wants them peeled. My daughter says if from the store, peel them as they are too waxy. This cucumber plant was supposed to be a "straight eight" plant. Those are usually solid dark green and about eight inches long. I think someone switched the tags. This looks like a pickler. They are spiny and stubby looking. There are enough little ones on the vine right now for me to make a jar of gherkins, I think. I have quite a bit of just random produce I need to do something with and have some lovely meals. I really like the freshness of summer.

I agree with your daughter I peel them if they're from the store (because they won't come clean) but I eat the peelings when they're from the garden. My cucumbers are spiny but large if I let them grow and they taste like a slicer. I don't remember what kind I planted. It was supposed to be a bush cucumber but it isn't.

@GardenGerty I grew mine from seed and they still didn't turn out to be what they were supposed to be. Oh, well, they taste good. I hadn't thought of putting the peels in water. That's a good idea!

@GardenGerty If you have a long enough growing season, why not? If the weather fails you, it only cost you a few seeds. It's too late to start anything but cold weather crops here. Our "average" frost is mid October but I have seen it snow in September.

@peavey I am tempted to plant some seed even now. One of my first years gardening I planted in August and pickled in September. It was a very hot year.

That's one success I had in the garden this year: cucumbers.

I had good luck with herbs in various beds as well as my cucumbers. I have finally set some fruit on the tomato plants.

@GardenGerty I've had four large cherry tomatoes so far. A few more look like they'll be ripe in a few more days.

I would just scrub them well and not peel them, but it is not hubby's taste.

@GardenGerty Right. Is it a texture thing?

I do not peel the cucumber because they come from our garden. When I buy the local cucumbers they do not need to be peeled, they are not waxed.

That is very true. Local, fresh and unwaxed.

@GardenGerty It is scary how much wax they put on the products sold in the grocery stores.

Vegies fresh out of the garden are always the best.

Yes, they are. I do not grow a lot right now, but I am enjoying what I have, plus herbs.

I don't normally buy cucumbers, although I eat them in salads at restaurants. Do you feel your tomatoes? My grandmother would always peel the skin, but my mom never did, not so I don't either. I figure washing it is enough.

The garden grown, home grown tomatoes sometimes have a tougher skin so people peel them. Or a person might have diverticular disease. I do not peel them, but I do notice the difference between the grocery tomatoes and the home grown.I do wash them, of course.

I like to do this type of salad just before dinner. I use balsamic vinegar, though, and a bit of olive oil. Kosher salt and black pepper too. Yum!

I have done it with balsamic vinegar and pepper. Sometimes I do dill. I have had it with tomatoes either sliced or cherry tomatoes halved.

Nice you have some produce to do meals with Heather. Yes, I do peel cucumbers now as the outsides are so rubbery now these days and taste not so good. I do love cucumbers tho a lot.

The ones in the stores are waxy and tough. Unless you get burpless or English cucumbers.

I do prefer my cucumbers peeled. But I will eat them peeled or not. Both are good, and both are good for you. Your snack sounds delicious by the way.
