Not totally vegetarian, but very good

My sister's friend grows spaghetti squash. I suspect my sister does not know how to cook it. So she gave two of them to me. Spaghetti squash un cut and uncooked will keep a long time on the counter, but I wanted to fix one. I chose the smaller one. I split it in half, scraped out the seeds. Put it with a little water in a covered dish in the microwave for 9 minutes each half. I placed the cooked ones face down on a cookie sheet while I did more prep. Lucky me, I have tons of yummy veggies on hand. I cut up beautiful red bell pepper, and green bell pepper. I chopped three cloves of garlic, a small red onion and four big white button mushrooms into the cooking liquid from the squash and cooked those for five minutes. When that was done I scraped the spaghetti squash out of the shell and stirred it, and about 1/4 parmesan cheese, and a 16 oz jar of Alfredo sauce all together with the cooked veggies. I also added a bag of fully cooked shrimp. I heated the dish one more time. Like I said, it is a lot of vegetables, but not totally vegetarian. Alfredo sauce has milk and cream. Parmesan cheese and shrimp are not vegetarian, either. Before I added the shrimp, I took a container out to take to my sister. She is allergic to shrimp. She will be able to enjoy this with chunks of chicken in it. So that is my creative lunch for today.

How closely does the taste of spaghetti squash mimic real spaghetti?

It tastes nothing like spaghetti but it has a pretty mild flavor.

It doesn't mimic it at all. It's more the experience of twirling something around your fork while you eat without having as much of a carb hit.

@NJChicaa To me it tastes absolutely nothing like the pasta spaghetti, no matter how hard I tried to convince myself, I could not enjoyed it at all.

That sounds good! I had spaghetti squash yesterday. Though I put the whole squash in the oven to cook and then cut it in half. I don't have the strength to cut it before I cook it. Then I put each half in the microwave for ten minutes.

I stick a knife point down in the squash and it splits. I have heard of people boiling it whole, just puncturing the skin so it does not explode.

@GardenGerty I've done the knife method before I baked it whole, then cut it. I guess I'm a weakling. It was very hard for me to cut. Now, I bake it whole, then cut it when it cools, and dig out the seeds and mic it for another 10 minutes and it's perfect.

@andriaperry, it is very good. I am pretty sure you could do it. I now find myself wondering how it would be to split it, take out the seeds and oil the surface and roast it, if that would cut out some of the liquid. I would love to try eggplant or zucchini for lasagna noodles. Hubby will eat my lasagna, but I do not boil the noodles. Something about boiled pasta makes him nauseous.

That sounds awesome! I have a recipe for spaghetti squash carbonara I want to try. I might get one today. I also saw a recipe for 4 cheese spaghetti squash.

Spaghetti Squash is one of my favorites, but of course, I don't cook it often because not everyone likes it. I would sooner use spaghetti squash as a noodle than anything else. Your meal sounds delicious.

@GardenGerty I always want to make sure that whatever I will cook, all three of us will eat. That lives out Pork as one person won't eat it, spicy foods are out because the other won't eat those. It is a headache sometimes.

I doubt my sister will cook it. It would make much too large a quantity for her. That is why I do not mind sharing with her. I had thought about just making half, but hubby and I love having left overs. I like to cook once and then have two or three good meals. @CinnamonGrl

I have put cheddar with it often. I think the cheese compensates for some of the moisture in the squash. Others might use some bread crumbs on it.

She is constantly giving us stuff she has on hand when it is more than she wants. I do not mind fixing stuff and sharing with her. She actually lived with us for over a year.

I like to use it as an excuse to eat yummy sauces. I like pasta, hubby does not and I should avoid it. @compslick you sound like my son.

@compslick Kind of the opposite here. I've always enjoyed most kinds of winter squash. Not as fond of the summer variety but I will eat them.

@Marilynda1225 you are right. It is neutral enough I could even mix it with cheese the way they do cauliflower and pat it into a pizza pan and make a pepperoni pizza, I bet. I may try that with the next one.
