Yesterday's Harvest

This image is of the cucumbers we picked yesterday. We have more of both sizes. The large ones are so large across that one slice fits nicely in a wide mouth jar. It has been too rainy to check on them. The instructions say to put the spices and slices in the jar, add Kosher salt, white distilled vinegar and distilled water. Let them set upright twelve hours then upside down twelve hours, then open and try them. So at 9 tonight I should have a verdict for you. We made four quarts of the refrigerator pickles. Supposed to consume them within a month. I think I will make and can relish out of the smaller ones.

This recipe also suggests pickling some other veggies. I may try later, we shall see.

@vsai2008 They are tasty. I put a lot of garlic in them and you can certainly taste that as well. I think pickles are fun and healthy side dishes.

@GardenGerty I will use some to make jalapenos jelly, may be I will stuff the others with cheese and fry them.

It has been quite a few years since I have done any pickling or canning or anything like that, but it was fun. I will probably end up doing quite a few.

Wow!!! Looks great. I ever harvest my own cucumbers too. And some spinach, long beans, beans, eggplants and melons. I don't think there is anything better than vegetables from the garden itself.

Early in the season, when we were not getting rain and I did not water enough, even the small ones were bitter. These did not taste bitter at all.
