Making my lunches for the week

Another work week, another week of salads. . . I just grilled some boneless skinless chicken breasts that I seasoned with Penzey's Adobo spice blend last night. Now I'm in the middle of chopping up the veggies: romaine lettuce, celery, baby carrots, and English cucumbers. Having a bunch of lunches made and ready to just grab makes it easy to eat healthily while at work. Otherwise it is too simple to just grab last night's leftovers and I try not to eat too many carbs. They are fine for dinner but not for lunch too.

Being a diabetic , I have to eat my carbs in the day and for dinner I will do the salad and protein. But that is a healthy lunch!
