An interesting Vegan recipe we tried

My husband and I tried a recipe from a Vegan Cookbook the other day. It was for Vegan Quesadillas. I cooked and mashed a sweet potato, added black beans, white beans, brown rice, salsa, and some fresh spinach. All those ingredients were mixed together and heated on the stove. In another pan, I warmed one soft tortilla shell, added some of the above mixture and spread it out on the shell. Then I topped that with another tortilla shell and flipped that to warm it. When the finished Quesadilla, was ready to eat, it was placed on a plate and cut in half like a sandwich. It was tasty. It was an interesting mixture of non meat food that created a rather filling dish.

That sounds awesome except I'm not a huge fan of sweet potatoes. I would give this a try though! Do you happen to have a link to the recipe for exact amounts of is this just something you created on your own?

Sounds yummy. We rarely cook with beans. Make that never cook with beans. Our son in Ireland does though and we've enjoyed his meals.
