Cooking mussels with beer, my first attempt

My supermarket had a discount on mussels from the bay of Mont Saint-Michel today, sold 6 Euros the box of 1.4 kg. Very cheap for these high quality mussels. But they were bulk mussels and most of them small. I had read that it was better to cook small mussels with beer (the Belgian way) than with wine (the French way), I searched a recipe online and I gave it a try. I boiled my mussels and shaked them until they were opened, then I added some thyme, laurel, garlic and, instead of white wine, a 33 cl bottle of a Waterloo triple blonde beer, which is a good Belgian beer despite of its dubious provenance. Then I went away. I should not have trusted this guy telling that it was the same recipe than «moules marinières», except that white wine was replaced by beer. I was away 10 mn, and when I came back it had overflown everywhere. I would perhaps have heard something with a gas cooker, but with induction, nothing. «Waterloo, gloomy plain !» like wrote Victor Hugo. Maybe is it because of the brand of the beer, but I would be more tempted to strangle the author of the recipe, or at least to invite him to clean the pot and the cooker. A bad experience with an online recipe ?

Recipes, yes, frequently for disaster... Sorry you had to clean up your nice induction hob unnecessarily.

I tried making bread in a cup in the microwave. That was pretty yucky too.

Was the bread edible ? The mussels are good, but I should have better stayed near the pot.

For sure I've had bad online recipes. That's why if possible to save me some trouble, I like to read the reviews/comments that come with online recipes - although they are not always there. As I've been cooking a lot for my parents lately, I found a miso butter recipe to go with Japanese Murasaki sweet potatoes. It sounded like all the rage with most of the reviewers . . . but one person said it was gross. They said perhaps because of their Japanese upbringing, all those flavors did not go together and they found it pretty horrible tasting. One reviewer also suggested different proportions of the ingredients - at least I followed that. It wasn't bad, but it was strange - I couldn't really decide if I liked it or not. I don't know if my parents really liked it either . . . although they would normally like miso anything. It wasn't an expensive waste, but well, most likely I won't be trying that recipe again . When something is very flavorful in the first bite, they sometimes call it a taste explosion. I don't think you were expecting this kitchen explosion !

More a flood than a volcano eruption, maybe because I had not covered the pot. I think I had miso only once in a soup in a Japanese restaurant. I go to Japanese restaurants mainly for crude fish, sashimis and sushis. I am a primitive liking crude meat and fish. My only attempt at Japanese cuisine was with a sushi kit. It came with 2 molds, 1 knife, little tablecloths, chopsticks, some rice, seasonings and recipes, but the Japanese cook was missing, and I cannot tell that I have been very satisfied by my sushis. I have decided that it was more reasonable to buy them.

@much2say It is abuse somewhere, I would insist to refund her at least for the ingredients if she does not want to be paid for the job. Weird, but the mussels were good despite of the flood.

@topffer I agree - I sure wouldn't do it for free. But she does whatever is asked of her by these coaches - she feels quite obligatory to do it (maybe a Japanese thing?). The coaches are hardcore Russian apparently - everyone at the gym apparently does as they request. Hopefully the tasty mussels made up for the flood!

Yes, I wanted to make lemon rice, sorry to cook it.. But, it seemed more of spiced up Fried rice.. Not to make me feel bad about it, my moma ate it all.. Thank god that she did not fall ill..

(I could imagine the funny sight!) I never cooked mussels that long in case they became too chewy. Seems as yours turn out OK, .

I am not good at cooking mussels. If I have to cook them, perhaps I will just steam them because this is the easiest way and it won't go wrong Sometimes we can't completely trust the online recipes. This is why I only upload the recipes which I tried and I can succeed it without problems. I remember in the past I tried a bread recipe but it failed and my husband teased it for a long time.
