Stuffed peppers made with cauliflower rice

Someone in my gym's detox diet group posted over the weekend that they had made stuffed peppers but with cauliflower rice instead of regular rice. I thought that was a great idea. She said she also used ground turkey instead of ground beef. I would probably do that too since I usually have ground turkey in the freezer already. I just did a quick search online for a recipe but found that I'm going to have to devise my own--they are either topped with cheese or they contain beans, both of which I'm not allowed on this 21 day detox plan. I'm looking forward to trying them out next week though. Seems like a fun new low-carb, high-veggie/fiber meal. Even the bean/cheese version would be delicious after I'm finished with the detox plan. Stuffed peppers,I think we have that in the Philippines.We call it "Dynamite"

@NJChicaa Yeah. Because it is spicy.It is pepper stuffed with cheese coated with flour and deep fried.

Goodness, cauliflower instead of rice! I've never heard of this, but it sounds pretty good:) We never put beans in stuffed peppers, but all the ingredients are the ones that go into porcupine meatballs.

These days with online bloggers posting recipes, there are as many variations of things as stars in the sky. I never think to make stuffed peppers because that isn't something that I grew up with. I'm only going to make them because my friend posted about them and they looked so good.

@NJChicaa My mother use to make stuffed pepper, quite often. She made a lot of dishes that called for ground beef.

@kobesbuddy My mother hates red meat so we always had chicken growing up. I can barely stomach it as an adult.

Do you make the cauliflower rice or buy it? I bought some frozen cauliflower rice from Trader Joe’s which was really really good.

They are good if you can tolerate peppers. I know some people can't.
