Harvesting and Using Horseradish help

This says the best time is in the spring: http://www.theselfsufficienthomeacre.com/…/harvesting-and-u… I would prefer the spring because I use horseradish during Passover and it even says the tender young leaves in salads, except I remember this past spring I thought my horseradish died because I couldn't find the leaves until much later in the season. I want to try the young leaves in a salad, but I can't find them until much later in the season. Does anyone have any tips on how to find the leaves for salads and even if it is later in the season, is it okay to dig up the root later when the leaves are more noticeable?

Thank you, I accidentally came upon one of the links Facebook page and I asked. One suggestion was to put something around the plant so I can find it next year, but my neighbor told me that they grow fast. In other words, check the spot every other day if not daily in the spring, because if I don't, the leaves will be too big.

@JudyEv That's what my neighbor said, because early in the spring, I can't find anything but I come back a week or two later and it's huge.

I like horseradish on red meats, but I have never tried the young leaves. Here the horseradish harvesting is from winter to early spring. The leaves are only available in Spring. May be your area is very cold, move the roots in a warmer area of your garden.

I don't think cold is the reason I don't see the leaves right away, I think it is because once it pops up out of the soil, it grows super fast.
