I've gotten a little done

My hands are almost numb from arthritis pain, but I've accomplished a bit in the kitchen today, at least food prep-wise. I shredded 4 sweet potatoes (although someone peeled them for me) and made 4 sheet pans of sweet potato hashbrowns to eat during the week. I cooked a whole chicken in the Instant Pot and stripped the meat off of the bones; I'm making some chicken stock with the bones and other scraps in a bit. I'm currently roasting some butternut squash, carrots, apple, and onion to make roasted butternut squash soup after dinner. I'll be using some of that chicken stock in it too. I've also shredded a whole head of Napa cabbage and several carrots; those will be used in Eggroll in a Bowl later this week along with some green onion and mushrooms. I'd love to use ground pork in that, but my main available protein this week is chicken. It will still be good with the chicken. Tonight's dinner is easy, we're having breakfast for dinner. I'm scrambling a bunch of eggs with some sausage that needs to be used up, plus I'm making an applesauce cake (applesauce bread?) to go with it. I guess I should make some kind of vegetable... I have some spinach I can saute, and at least some people will eat it. It needs to be used up anyway. I sure am tired now.

I'm realizing that I'm either going to have to utilize my indentured servants (the kids) for food prep during the holidays or I'm going to have to start buying prechopped vegetables. My hands still hurt this morning, and I can't imagine peeling 5 lbs of potatoes and chopping all that celery and onion for Thanksgiving dinner.

Yeah, it's everything that would go inside an eggroll, but without the wrapper. It's kind of a stir fry, I guess. There's all kinds of recipes for it all over the internet and it's very versatile. You can tweak it according to what you have on hand or for various diets (vegetarian, Whole 30, etc).
