In a pickle

The last part of the summer, and when I started to work it was hard to get out to my little cucumber plant. This image is the result. Lots of big, fat cucumbers. Last night I was peeling, slicing and removing the seeds. I plan to make a kind of pickle known as cinnamon rings. They actually pass for cinnamon apples. It using pickling lime and alum. I had a hard time finding pickling lime this time of year. So when I am not here, I will be in a pickle.

I hope they turn out good. I dont make pickles anymore. But you can check farm stores for your supplies too. We have a Rural King here that carries canning supplies all year.

I found what I needed in Wal Mart, but they had moved it way across the store. I am wanting to be more like @andriaperry and put by more home canned foods.

@GardenGerty Yes, our Walmart actually has the stuff in 2 different areas right now. Of course those 2 areas are not close to each other.

@GardenGerty The canning salt and pickling lime has always been in the kitchen/ dish section by the jars.

Oh, I haven't had cinnamon pickles in a while! I remember they looked like cinnamon apple rings, although tasted more like sweet pickles with cinnamon. Maybe that was just my mom's recipe. She also put green food coloring in them, which seemed really weird to me as a kid.

The first time I had anything like this my friend had made red and green ones and called them Christmas Pickles. That may be what your mom had. Last year at Thanksgiving we enjoyed a jar from my friend Audrey's mom, at my brother's house for Thanksgiving. Audrey is my sister-in-law's best friend and is a friend of mine as well.

It depends on how you want to use them. I wish I had gotten to these when smaller, but they are all good.

@GardenGerty True. But there are several things I don´t do anymore now that I live alone. Unless some of my friends like it very much and I use then for Christmas presents.

I haven't seen this type of cucumber as in your picture.Ours is long and thin and has spiny skin.
I'm growing 2 kinds of cucumbers, one is a pickling type (can't remember the exact name), the other is called "straight eight". They both have prickly spines on them, what is causing this?

I thought I had planted a "straight eight" plant, but it may have been mislabeled. If I had kept up with this plant and picked the cucumbers at about three inches long, I could have pickled them whole and made "sweet gherkins". English cucumbers are long and have very tender skins. It is fun to see what kinds of foods go around the world.

I have had some very good ones in the past. This is a new recipe for me. It seems to take three or more days to make. I will can them on Friday.
