The Impossible Pecan Pie Recipe

I'm a huge fan of Stella Parks who wrote the Bravetart baking cookbook and who is the resident pastry wizard on Serious Eats. I kept seeing mentions of her secret pecan pie recipe over the past week or so. . . and eventually learned that she has a recipe for it that she described today as "murderously difficult". It is so challenging that she refuses to publish it. She will, however, email it to people asking for it. I'm not from the South. Pecan pie is not really a "thing" in New Jersey. In fact, I've NEVER had it in my life. I don't know if anyone in my immediate family has ever had it. We eat pumpkin pie for Thanksgiving. That being said. . . I feel this strange need to try to make Stella's Impossible Pecan Pie. I am always trying to improve my baking skills and I love trying new things. The thing is that I am already committed to making the mashed potatoes and the green bean casserole (with a homemade mushroom cream sauce--not canned) for the meal. I REALLY don't need the extra added pressure of trying to make a super-challenging pie too. That doesn't mean that I won't do it though.

I have tried pecan pie twice in my life while visiting the US. It is the best piue I have eaten by far.

Are we talking about the same pecan pie as here? With the sweet syrup middle and pecans on top?? If so very easy.

Pecan pie is my favorite and isn't very difficult. I can't imagine why hers is.

She said that her recipe involves tempering raw eggs into 200F hard caramel. That sounds challenging.

@DianneN I may attempt it over Christmas break. Don't think I have enough time to comfortably do it on Wednesday/Thursday. I'm already making 2 other things to bring to my parents' house.

@JustBhem sweet but salty. I only eat it on special occasions as it's sweet. But it's like a bitter tart but massive pecans.

I just love to cook and try all kinds of recipes but from what you say I would not attempt this pecan pie. However, if you do let us know how it went.

Why make pecan pie so difficult to make? It's easy. Sometimes it's yummy and once in a while it's not. I have no idea why.

I know how to make a total gut buster of a pecan pie- real honey and real butter. No more. Can no do on making such a totally yummy and totally bad for me pie. Mushroom sauce isn't hard. Go for it. Have a wonderful holiday.
