In the midst of Thanksgiving prep

I had one of the kids peel 5 pounds of potatoes and put them in a bowl of water in the garage fridge two days ago so that I could make the make-ahead mashed potato casserole for Thanksgiving today. To my horror, the potatoes FROZE and turned black. They're not going to make nice mashed potatoes at all. Back to the grocery store I go...

@spiderdust I also checked after I found a bag of snow peas frozen in the refrigerator. At least I was able to use them in a stir fry.

Yes, it was just my bad luck to have this happen. I fixed the settings on the refrigerator after that.

Potatoes are so gross when that happens. I never knew they get liquid in way that I describe as puss from a wound. Poor potatoes.

Fortunately they had only oxidized. They hadn't liquified, and I was able to salvage them.

Yeah, the water was partially frozen. Someone had turned up the refrigerator to the maximum setting and I didn't know. I managed to salvage the potatoes, but not for mashed potatoes. I cubed them and tossed them with some oil and seasonings, and then roasted them in the oven. They were great for that night's dinner and the kids were none the wiser.

oh that is a shame. I hate peeling potatoes. When I am making mashed potatoes for just the 2 of us, I normally leave the skins on unless it is a special occasion. I'll peel them for Thanksgiving, though.
