The earlier meals were not healthy so I decided to try tonight.
First I made a salad each with just lettuce, tomatoes and cucumbers, black olives for me.
Then it was sort of a goulash. I used Ragu sauce an loaded it down with bell peppers, onions and mushrooms.
When Tony finished he said " That was the best goulash you have made in a long time."
I smiled and replied "It did not have any meat in it."
There ya go! Now you know why I get paid as a personal cook. It was so good he did not miss the meat.
How about you, anything special for dinner?

@andriaperry Thank you, I did not know it was a brand name. I buy tomato sauce in jars in winter to make my own sauces.

Its actually a brand name of a jar sauce, I buy the mushroom or loaded vegetable type but I think you can get it with meat. Usually I make my own sauce but was lazy.

Chop it all very small or when they ask, no that is not in the food. NEVER tell them what is in the food.

I made a vegie pot pie- individual sized. I meant to put salad along side but hubby's bus was late then my sister called to report on my Mom and just that quick, all thought of salad went out of my brain. We had nuts and cran raisins instead. Tofu inside the pie for protein. Garlic cauli sauce- kind of gravy- if we wanted it.

@andriaperry Much of my cooking is just go as I see it. Very few recipes. I used to make meat pot pies. Now I sub in stuff like tofu or beans or nuts. Same with gravy or sauce. Almond milk with wheat flour for thickening. Garlic powder or and onion, soy sauce, stuff like that. Works good and tastes good. Cauliflower sauce is tasty if I don't put quite so much garlic into it.

Wait you get paid for taking care of Tony?
I don't do Ragu, or bell peppers. So that would be a no. Ragu is too sweet for me.

I usually make my own sauce from the tomatoes I grow and home can but I was lazy. Bell peppers are a huge part of my life.

@andriaperry We don't buy bell peppers. They don't have enough flavor for me, and the other half doesn't like them.

That's great that he liked it and didn't miss the meat!
Didn't have the healthiest meal here, but kept it low carb-ish.

@andriaperry Well twice in a month doesn't too bad...but I understand that if you are trying to cut it out then twice is more than you want. There is a kind of pasta that is low calorie and mostly just fiber...but I can't stand the texture (it's called miracle noodles -- or shirataki noodles)

It sounds good to me..sometimes, if sauces are loaded enough you don't miss meat..Have you tried stuffed portobellos? They are awesome.

You see, meat is not necessary if one is a good cook. If one is not a vegetarian, they can put just a tiny piece of meat but put more vegetables.
