trying to use up the Thanksgiving leftovers

I am getting the very last of the leftovers used up today! I thought we finished them off last night when I made "turkey spaghetti" (based off of Pioneer Woman's chicken spaghetti recipe), but I just found another container of turkey meat in the fridge and I still have stuffing left. I'm doing a "Thanksgiving flavors" casserole with the rest of the turkey, the stuffing, some cranberry sauce (I don't have any leftover, but I still have an unopened can that I don't mind opening for this purpose), some green beans, and some kind of gravy or cream sauce (since we finished off the gravy when I made the turkey pot pie on Saturday). After tonight's dinner, I'm looking forward to having something non-turkey related to eat tomorrow.

We've already used the "sandwich friendly" slices, and I've mostly just got shredded meat at this point.

I wish the leftovers would last longer . . . so yummy and convenient! I would love to find another container of turkey but I won't. Your casserole sounds great!!

Oh, I don't mind having leftovers for days, but I get to a point where I'm tired of eating the same things. I made curry with it one night, but that was when the picky ones weren't home. Besides, after a certain point, you run the risk of food poisoning if they get too old.

@spiderdust My sister got a just enough turkey size this year, so there weren't too many leftovers of turkey to go around this year. This year I only have enough to make a turkey soup with the leftovers. Turkey curry sounds good too - never had that. Yah, I gotta make that soup today or tomorrow . . . it wouldn't be good to get food poisoning!

@much2say It's not much to look at, but it was a tasty curry. I sauteed some of the leftover mirepoix that I had in the fridge, then added some curry powder, some tomato sauce, a bit of the gravy, a can of coconut milk, a few shakes of garlic salt, and then the chopped turkey meat and some frozen broccoli towards the end.

I hope you enjoy your dinner! :) My family doesn't eat turkey. Ironic I was born Thanksgiving day but don't like any of that meal!

I have a few pounds of Italian sausage in the freezer. I might make a good pasta sauce using that.

That sounds good except for the cranberry sauce. I don't like fruit in my food.

Not everyone does. I'm actually on the fence as to whether I should include that in the casserole or to serve it on the side. Everyone here will eat cranberry sauce, but I'm not sure if they'd want it mixed with everything.

Had no turkey this year but there was ham and the ham bone and last of the meat are going into a big soup pot tomorrow. I just don't know if I should add potatoes or beans or both.

My leftovers have moved on. We no longer have any. I had a houseful of people to eat them up. Plus, I sent some home with other guests.
