Baking My Bratwurst

@andriaperry, please do not scold me. Man, I know you are there, lurking at the edges, calling me "Dominoes man." I love me some bratwurst. Maybe it's the German in me. Maybe it's the Wisconsin in me. Bratwurst is VERY popular in Wisconsin, if you did not know, but there is also a lot of German heritage in Wisconsin. I love bratwurst in variety of ways. Mostly par-boiled in beer and then put onto the grill. But I like it with sauerkraut too, and cut up and added to other dishes. Okay, okay. It's loaded with salt. But I have been a good boy most of the week with my salt. I have been using unsalted butter, I have been seasoning with Mrs. Dash. My sodium counts have been very low the past few days even if I did splurge a bit when we met with family and friends after a Christmas show this past Sunday. I am baking them this time. Something I have NEVER done with bratwurst. I cannot imagine they will not be good. I mean, how wrong can one go? I have never had a bratwurst I did not like, so these should turn out just fine. I plan to serve them with some baked beans and a little bit of a salad ewe have left over my wife made with cole slaw from last night. More salt in those damned baked beans. But hey. I think I will survive. I am cooking them as we speak, and can't wait to dig in once they are done.

I don't think I've ever had bratwurst. I gave up all sausage like 15 years ago. Except pepperoni on pizza which no one can tell me is a form of sausage.

Oh, bratwurst is yummy. And yes ma'am, not to burst your bubble, but pepperoni is indeed a sausage.

They were good as always. That night I played it somewhat safe and just had 2 1/2 of them. But I did have two more for lunch the next day. What can you do? They're good!

I am not so worried about the salt attacking your part German body and taste bud desire goes-- as I am the nitrates in how the pork is processed for that to become a bratwurst and ferment in your body . . .

I have found that these days there is garbage in just about everything we eat. By the time one gets done, we'd all starve.

@porwest actually you are incorrect Jim as 'everything' does NOT have garbage additives in there--- you have to read labels and understand chemistry to really become the best in your wellness approach-- stick with me and you'll be on your way to better health in no time. PM me and we can discuss this more, ok ?

I really love bratwurst now and then. I love to take sauerkraut and put it in a pot with a bit of water on the bottom so it does not stick. Then cook the sauerkraut for several hours so it is golden, add bratwurst and cook for about 20 minutes more. A great meal.

When you say your sodium counts have been low, do you mean your estimates from food labels, etc. You don't have blood tests for it do you?

Do you like/devour other sausages besides bratwurst? Bockwurst or potato sausage? I really am trying to be a vegetarian but dang my childhood and authentic sausage. Not that store crud but stuff made by a butcher.

I really like any kind of sausage. Although I never heard of bockwurst or potato sausage. But I do like Italian sausage, pepperoni sausage, kielbasa, Polish sausage...and the list goes on.

@porwest Bockwurst is white- maybe has veal in it. Potato sausage maybe Swedish. Tasty stuff. And hard to find. When I was a kid my Mom would buy bologna in a big ring. That was authentic. Not like now.

@sallypup I will have to look for those. I wonder if a store back home in Wisconsin, Usingers, might have them. They have a site online so I will have to look. Bologna is one those weird things for me like the fact that I love peanut butter but dislike peanuts. I never liked bologna in a ring as much as sliced...but we might be talking about the same thing.

Bratwursts are more than popular in Switzerland, they are always "baked" here and served with sauwerkrauts, or even better, with rösti (potato fritters) and an onion sauce.

Have you ever made your own baked beans? Even I've done that and I don't like baked beans, but scratch made was extremely good. That way you could cut down on the salt they load in those canned beans as a preservative. I'm proud of you for keeping your sodium levels down.

I tried a couple of different recipes for them and could never get them quite right for whatever reason. That being said I used to always buy dry beans and soak, but got lazy over the years. I think I need to switch back.

@porwest I'm talking dry beans. I made them once, soaking them overnight. It makes all the difference and because they're not in a can, there's no sodium unless you add it.

@just4him Oh yeah. No I caught that. I used to use them but eventually switched to cans. But need to switch back to dry.

Oh my God! You are making me hungry. I am missing the Bratwurst. I love it fried or with vegetable kale and potatoes. Bratwurst is the first food that I always eat when I am back in my home in Germany. How I wish I could make my own Bratwurst here in the Philippines.
