What do you like to use leftover vegetables for?

I have a lot of veggies to use, so I think I am going to make an omlette tonight. What do you like to use your leftover veggies for? Do you have any special dishes that require the use of alot of vegetables?

We only buy what we can use up in a few days. I serve them as a side dish and use certain veggies in omelets or in pasta.

Yes, sometimes they are good in pasta. In the summer, I like to add them to pasta salads. I don't make them that much in the cooler months though.

I am totally surprised that you throw out the leftover veggies! Totally! Remember the price you paid for them and it is like you are burning money.

@LadyDuck That sounds pretty good. After you posted that, I looked online. They say you can use coconut milk in it too.

@snowy22315 Prepare a stock (bullion) using a cube. Simmer during 5 minutes all the leftover vegetables, blend the soup until smooth. You can add a bit of cream if you like before serving and you can serve with croutons.

@snowy22315 with veggies like cabbages,peas, potatoes, aubergines,onions .It comes out very well. If you have leafy veggies then ,I chop them up and mix with wheat flour and make flat bread

You can use the vegetables for vegetable soup, vegetable stew or a recipe I have called mix n match skillet. Mix n match is simple: one meat, one vegetable, one soup and one pasta brought to a boil then simmered 25 minutes.

An omelette sounds a good idea. Depending on the vegetables available, stir-fries can be useful.

Oh not that much of a veggie fan to do that..they pretty much have to be in something for me to like them..unless it is a relish tray or something.
