What's going on the dinner table tonight? Do tell!
I'm making stuffed meatloaf from Mario Batali's cookbook Molto Italiano. It is an interesting recipe because the meatloaf is "rolled" and contains proscuitto, baby spinach, carrots, and cheese (I use fresh mozzarella). It is then coated in a layer of bread crumbs and baked for an hour which gives it a nice crispy exterior. It is really good! To go with it I have leftover mashed potatoes and I'm going to make some cucumbers marinated in balsamic vinegar.
That's what is happening here. What are YOU having? I want to know!
Mario Batali’s stuffed meat loaf is a deluxe yet easy take on the classic. He simply rolls spinach, prosciutto and cheese into the ground beef and pork mixture.
