Tonights Dinner - Salad Plate / myLot

Tonight's dinner will be a nice, simple dinner. Since we had some leftover roast beef from last night's dinner we will make a cold plate or salad plate. The hubby sliced the beef into thin slices and I rolled them into tubes. We will be adding to the plate some avocado, sliced tomatoes, sliced cucumbers, cheese chunks, black olives, mushrooms, boiled eggs, and anything else we can find in the fridge, I will most likely use a black olive, parmesan salad dressing to drizzle over the plate full of goodies. I love putting together dinners like this. Since it is in the upper 60's today, it isn't quite as warm as it usually is when I make dinners like this but I have really been wanting one lately. Oh yes, we also have some leftover macaroni salad I think I will throw a scoop of it on the plate along with the rest of the food. So, what's for dinner in your house?

I make up my mind about dinner in the morning if I have to thaw meat for it or leftovers that I want to use.

We ended up stopping at KFC on our way to bingo and using the rest of a giftcard we had for some mashed potatoes and chicken.

@HazySue We stopped eating there for probably 3 years, but started back up in December or January, and now all I want is the chicken and potatoes again lol

We have the a/c on. 78 here. Last night we had tuna melts, and tonight will be penne and meatballs with a salad. The weather doesn’t make any difference on what we eat. I make delicious dinners like yours a couple of times a month. Yum!

I have hamburger in the fridge and will probably put it over a couple of potatoes. Your dinner sounds good.

@HazySue I bought regular potatoes this time around. I like to do that too, though there wouldn't be any sour cream or chicken on mine. Tomato and onion would be my toppings of choice or guacamole.
