Cottage Meatloaf - Cottage Meatloaf
Hi there - I usually make the Cottage Style Meatloaf here and my family really likes it. Take 1 1/2 lbs lean ground beef, 1/2 cup tomato ketchup, 1/2 cup tomato juice, 1/2 tsp salt & black pepper, 1/8 tsp red pepper, 2 beaten eggs, 3/4 cup fresh bread crumbs, 1/4 finely chopped onions & 2 tsp prepared mustard. Combine the ketchup/tomato juice/salt/black & red pepper/eggs/bread crumbs/onions & mustard. Mix well. Add ground beef - mix gently but thoroughly. Line a 9X5 loaf pan with foil. Press in the beef mixture. For the Topping take 1/4 cup tomato ketchup, 1/2 tsp prepared mustard and 2 tsp brown sugar & mix well. Then spread this topping over the meatloaf. Bake at 400 for 35 to 45 minutes until done. Drain off fat and let it rest for 5 minutes. Garnish with fresh herbs if you desire. Sit down and enjoy!!!!

I have a good one. You need a pound of ground beef, 1 cup of seasoned bread crumbs, 1 bell pepper, 1 jar of spaghetti sauce, and mozzarella cheese. Combine the bread crumbs, chopped bell pepper, and half of the sauce in a bowl. Then shape it into the meatloaf, and bake it at 350 degrees for 30 minutes. Take it out and top it with the rest of the sauce, and the mozzarella, and put it back in the oven for 5 minutes. It really is a good recipe! My husband really likes it! Good luck! I hope this helps!
