Baked Potato for Dinner

Been trying to figure out what to have for dinner. When you spend most of your day outside, you don't want to spend much time cooking. I will probably have a baked potato, with all the trimmings. When spring and summer get here, I don't eat big meals usually. Salads and baked potatoes are two of my favorite meals to have. I enjoy baked potatoes with butter, cheese, sour cream and bacon pieces. I used to buy bacon bits, but now prefer the bacon pieces. Sometimes I will sprinkle some chives on the top. How do you like your baked potatoes? Hope your day has been good. I have enjoyed this day filled with sunshine. And the temperatures have been nice, low 80's F. Any dinner plans for you?

For me it's just the opposite. I usually can't wait to get the grill fired up. But a baked potato still sounds like a delicious meal.

I don't eat a lot at one time, small meals. Grilling sound good.

Yes, I had a salad yesterday, baked potato today. The potato was big, a meal in itself.

@caroldm After out forest walk and long drive today I made us a salad - leaves of some sort, tomatoes, scallions, cucumber, cheese and roast beef. A bit of a strange combo I admit, but so what.

We're heading to a music festival in a day or two and I know there will be a van selling stuffed potatoes. They will have a choice of yummy fillings too.

I don't like potato. But I eat it in a little amount as there are no ways out. Our most of the items consists of maximum potatoes and less veggies.

Baked potato sounds great, I like them the same with....just no chives on mine. Glad your weather has been nice! Ours is supposed to be in the 70's all week! Will be nice after Easter was freezing!
