What's the best cheese for a pizza that you have eaten? What do you think is the most delicious?

The only cheese I put on my pizzas is mozz. I think that is the best cheese for pizza

well, mozzarella is already common. i want to try something else that's rare or less eaten. but i don't think there is such a pizza that's rarely eaten. lol
