All Purpose Ground Meat Mix

Homemade mixes are not all dry. They are not all made from flour or spices. That is the great thing about homemade mixes. They are versatile. I do OAMC and alot of my preparations are the homemade mixes. I have posted a few to get you in the mood and help you to see the benefits of having homemade mixes on hand. Winter is the best time to get in the habbit of making and using mixes. Admit it, it is easier to be in the kitchen for long periods of time when it is not beautiful outside. This mix recipe is a great one to make when ground meat goes on sale. You simply purchase up a lot of it and go home to make your mixes immediately. It is best to purchase the meat the day you plan on making the mix. Fresh meat is so much better tasting than meat that has been in the fridge for a few days. The plan is to make the all purpose meat mix to use later in those soups, stroganoff, casseroles, skillet dinners, taco salad and other great foods. Are you ready? All Purpose Ground Meat Mix 5 lb lean ground beef, turkey or chicken 1 Tablespoon salt 2 cups chopped celery 2 cups chopped onion 1 cup diced green pepper In a large pot (I use a cast iron dutch oven) brown ground meat, stirring to break up the meat. Drain excess grease. Stir in salt, celery, onion and green peppers. Cover, simmer until vegetables are crisp tender (key word "crisp") about 10 minutes. Remove from heat and set aside Spoon into six 2 cup freezer containers with airtight seal, leaving about 1/2 inch space at the top of each. With a butter knife, cut through mixture in each container seveal times to remove air pockets. Attachy lids. Lavel with date and contents. Store in freezer. Use witin 3 months. Makes 6 packages or about 12 cups of All Purpose Ground Meat Mix. Here is a recipe to get your juices flowing. ___________ Skillet Enchiladas 2 cups All Purpose Ground Meat Mix 1 2/3 cups creamy Mushroom Sauce ( recipe in next post) 1 (14 oz) can enchilade asuce 1/4 cup milk 1 (4 oz) can diced roasted gren chiles 12 corn tortillas 12 oz (3 cups) shredded Cheddar Cheese 1 (2.25 oz) can sliced olives In a large skillet over medium heat place all purpose ground meat mix, creamy mushroom sauce, enchilada sauce, milk and green chiles. Stir occasionally until heated through Heat Trotillas in microwave oven until softened. Place about 1/4 cup cheese and 1 tsp sliced olives in center of each tortilla. Roll and place seam side dwon on top of heated meat mixture. Cover and reduce heat. Simmer about 3 minutes until cheese melts. Spoon onto serving plates. Makes 6 servings. Enjoy! you have such great recipes! i'm saving all of these to use, as i like to make a lot of things ahead.When i get home from work, the last thing i want to do is spend a lot of time in the kitchen! These are great...keep them coming!

It sure makes life more enjoyable as we dont have as much stress when we know we are already prepared. It is hard to have the energy much less the strength to cook a large meal from scratch when you get home from work. Been there - Done That. These mixes can really reduce stress because you know you can whip up something that is healthy for you family rather quickly. The commercial mixes are just not healthy. We do more harm to our bodies than we do good. Good luck making your mixes and using the recipes with them.

Thanks for another great recipe. I am making chicken enchaladas for dinner tonight. I am also making homemade refried beans to go along with it. I do alot of freezing of things when I make a big batch of food. It comes in handy for quick meals. I am going to have to get a notebook just for some of your recipes, they sound great.

Never made enchiladas. I have all of the ingredients too. Not sure how hubby will like it though. He is fussy. It can't hurt to try. Thanks again!

My husband loves them. I think it is one of those Men foods. I hope he enjoys it too. I had never had enchiladas till my husband introduced them into my food group.
