How Do You Add Categories to New Discussions?

I like to browse the most recent discussions here on MyLot by going to Discussions-All Categories--More But how exactly does a post get assigned to a category? When I go to start a new discussion, the only option I'm given is "General Discussion" and "Pick One of Your Interests" But that doesn't explain how there is a Business/Finance CATEGORY Please help
