I'm not a huge fan of Mozzarella - it's too bland, so better used for texture in my opinion. However, your recipe does work well if you substitute good ripe brie or camembert for the mozzarella, and use a good big piece of baguette rather than sliced bread. Also, try finishing it off with a bit of freshly ground black pepper, for an extra-yummy touch which gives it a bit of a kick, and goes well with the basil too. Mmmmmmm - cheese sandwiches! Mmmmmm!
