Sweet potato balls

Spray your hands with oil. Drain canned large sweet potato or yams. Mash and add brown sugar. Around 1/4 cup. Melt 1 tbs. butter. Press one large marshmallow inside yam ball. Then roll it in chopped pecans, or chopped walnuts, or toasted coconut. Place each ball in a paper cupcake holder and put inside a cupcake pan. Bake 10 minutes. Watch them. 350* preheated oven.

How many people have given up on their new year's resolution with all the yummy recipes that you are posting? I love sweet potatoes and they are so good for you. I feel like having turkey and trimmings with these sweet potato balls. How about on Sunday for dinner?

hahhaaha. I'm glad y'all are enjoying them. I have run out of questions, and figured I would share receipes that I thought were a bit different from the norm. I make these all the time, and holidays. They are so good. A bit soft and fall apart sometimes. That is why I put them in the cupcake paper and into the cupcake tin. Let me know how you like it. If you used canned, be sure to drain it well. The marshmallo can pop inside, so watch them. Well worth it though. Roll in nuts or coconut flakes. Let me know if you like them. Blessings, M&M

OMIG these were soooo good. I made them with fresh yams and I did a double batch. I was a very bad hostess, because when I saw the way they were disappearing, I hide 6 for my husband and myself. Hey! I made them, I can hide them. :)

Then roll them in chopped pecans or walnuts then. Just as good.
