of course it is important to rise the dough, so we will have a perfect risen dough and smooth.

If you use yeast, the dough will rise and be soft inside after baking. Without it, the flour will be more dense and won't rise. Blessings, M&M

It is the necessary igredient in baking that makes the dough rise and it initiates the fermentation process.
