A Healthy Treat - Oatmeal Blueberry Muffins

We have all heard of the health benefits of oatmeal. It is said that it will even bring down cholosterol. I try to use alot of oatmeal in my cooking. I love fruit. I love fruit of any kind but I think my favorite would have to be blueberries. They just taste wonderful. The problem is that I just cannot get enough. I have never been completly full of blueberries. This wonderful recip has the health benefits of both oatmeal and blueberries in a muffin. Everyone loves muffins. They can be eat for breakfast or a snack anytime of day. I hope you enjoy this recipe as much as we do. Oatmeal Blueberry Muffins INGREDIENTS: 1 1/4 cups quick cooking oats 1 cup all purpose flour 1/3 cup white sugar 1 tablespoon baking powder 1/2 teaspoon salt 1 cup milk 1 egg 1/4 cup vegetable oil 1 cup blueberries, rinsed and drained DIRECTIONS: Combine oats, flour, sugar, baking powder, and salt. Mix in milk, egg, and oil; mix just until dry ingredients are moistened. Fold in blueberries. Fill greased muffin cups 2/3 full with batter. Bake at 425 degrees F (220 degrees C) for 20 to 25 minutes.

Wow, yet another great recipe! And such a healthy one too, i lvoe to make oatmeal cookies but it gets boring baking the same things all the time. I love blueberries, though i'd have to wait untill they're in season in the UK (unless you can get them dried?), and everyone knows they're really good for you. Blueberry muffins are my fave, so i'd love to try this recipe!

Can you buy frozen ones? We buy frozen blueberries in the winter for pancakes and they're pretty good! I'm not a big fan of dried blueberries, so I just thought this might help!

Have you ever used frozen blueberries in this? If so do you add them frozen or thaw and drain first? I have a ton of blueberries in my freezer. Hubby loves muffins.

Yes, I have used them frozen. I do not thaw them but I quickly rince them to get the ice out of them. And use htem frozen

This sounds super easy. I think I really will enjoy it. Have you tried it with any other fruits, and will it work with frozen fruits? I like blueberries, but also mixed berries.

I'll have to try these on for my husband! His favorite food is blueberry muffins, but we always have a debate about what kind are the best! I really like the boxed kind with "fresh" blueberries and he likes the Jiffy kind with dried blueberries. YUCK! But, like I've said before I'm starting my new homemade kick and I think this one will be worth trying! Oh, have you or could you post a recipe for homemade white bread? We looked in all of my cookbooks and couldn't find any for a regular loaf of bread. We eventually took a recipe for dinner rolls and just put it in loaf form and cooked it longer. All the recipes for bread that we could find were for banana bread or amish bread and the like! Thanks!

Hmmmmmm, I've had blueberry muffins coming out of my ears in the past and never thought of putting oatmeal in them. I like that idea and your recipe. Thanks again Villageanne!
