I have had some of the best stuffed shrimp dinners at restaurants both here in California and back home in Illinois. But I have yet to see a recipe ever in a cookbook! If anyone has the recipe I would love to have it and try it! Thanks!

shrimp on toast . . we sometimes make the shrimp in presentation with this recipe : in a bowl ,add the deveined & peeled shrimp with tails with garlic powder , salt , pepper & parsley flakes then mix well & marinate for an hour then add well beaten egg. butterflied or squat 1 pc shrimp w/ tail up on the center of a 1 quartered slice bread loaf then dip into a bowl of beaten eggs , then to breadcrumbs & deep fry til golden brown. to retain the shrimp in shape at the bread you can use toothpicks as the skewer then just pull it off after cooking. this recipe is best serve with a dip of sweet & sour chili sauce & a cup of rice with stir fried vegetables !

our usual stuffed shrimp that we enjoy at home is kinda a chinese style cooking : mixture of ground pork , beaten egg , chopped onions & garlic , shredded carrots & water chestnuts , drops of soy sauce , dash of salt & pepper - well blended in a bowl . spread a wanton or spring roll wrapper & top a scoop of pork mixture then spread into the center of the wanton & split the deveined shrimp into the center with the tail out from the wrapper when folded into a triangle or dumpling form. deep fry until golden brown then serve with sweet & sour chili sauce ! great with hot garlic rice & pickled cucumber or succhini :)
