Carrot Patties vegetarian burgers

These Golden Jewels are so good. We like to eat them hot as a burger with mayo and tomato slices and crisp green lettuce, or ground mustard or even cold with a piece of cheese. You might like to experiment with different spices and flavorings that appeal to your family, a very versatile dish. 2 cups shredded carrots 2 eggs beaten 1/2 c mayo 2 TBS Olive oil 1/4 cup finely chopped onion (I like red or white) 1/2 TBS Chopped Garlic (or to taste) 6 cups of soft breadcrumbs salt pepper parsley to taste 4 cups whole wheat flake cereal, crushed oven to 375* F Place carrots in a bowl, and microwave until tender for 2-3 minutes. (we do not have a microwave so I just put them in a steam basket over boiling water for a couple minutes) In a large bowl stir together the beaten eggs, mayo, onion, garlic, oil, seasonings and carrots. Add the breadcrumbs and mix till evenly blended. Shape the mixture into patty portions then dip into the cereal to coat. Place on a greased baking sheet and bake for 25 minutes, turning half way through. They are done when golden brown. Enjoy!

Thanks, Modestah! I have always loved vegetarian recipes but I'm not a full-fledged vegetarian yet. However, I try to avoid meats as much as possible. I will try this recipe tomorrow morning. I hope my homies will love them as much as I will. Peace out :-D

These sound great for the vegetarians in the family except my grandsons won't eat eggs.I am going to try and make this without or use those powdered ones.I have a hard time cooking for them.but they look healthy and are doing good ,so I guess they don't need the meat or eggs.
