Crock pot chicken and dumplings

1-2 pounds of boneless, skinless chicken breasts, cubed into bite size pieces 2-1/2 cups fat-free reduced-sodium chicken broth 1-1/2 cups each chopped onions, celery and carrots 2 cups frozen peas, thawed 1/2 cup chive and onion cream cheese spread 1 pkg. (16 oz) stuffing mix for chicken 3/4 cup hot water 2 eggs, lightly beaten Combine chicken, broth, onions, celery and carrots in slow cooker, cover with lid. Cook on Low for 8-10 hours or on high for 3-4 hours Add peas and cream cheese stir until well blended. mix stuffing mix, water and eggs until well blended. Drop stuffing mixture, 2 heaping teaspoonsful at a time, onto chicken mixture in slow cooker. Cook, covered on high 30 minutes. Gently turn dumplings. Cook covered an additional 15 minutes.

My boyfriend will love you for this. He has been wanting to make chicken and dumplings for awhile now. I have a crock pot but I seldom use it. I really don't know what to cook in one and I lost my book that came with it. Thanks for the recipe.

Crock pots can be fun. You can cook almost anything in them that you cook in the oven or on the stove.

Thanks Carpenter5 for sharing your recipe. This is one I will have to try. I'm always looking for recipes where I can use the crock pot (yeah, I'm lazy but I like to eat :)) and ones that use chicken as the main dish. This is the first one I have ever seen where the dumplings were made of stuffing mix. Sounds delicious...can hardly wait to try it. Have a great day, Kowgirl

I broke the pot to my slow cooker. I'm going to have to replace it before I can cook in it again. I'm sad. lol

I love chicken and dumplings and I love the crockpot so you have a perfect combination here. I am going to try this, I have a chicken in the freezer. I will go thaw it now for tomorrows dinner.Thanks for the recipe

YUM!! Crockpot + chicken + stuffing + easy = my kind of recipe! I have never tried chicken and dumplngs with stuffing mix, but I know that I love stuffing, so this sounds like a winner for me! We are all about chicken in our home..we eat very little beef. I can't wait to try this..thanks!

Crockpots are wonderful things. I appreciate the recipes that are shared here. Chicken is a favorite in the slow cooker. Thanks so much for sharing this here at Mylot for all to see. I just might used this one today with my Sunday Chicken.
