Bacon and Avocado Potatoes

Makes 4 Ingredients 4 x 220g potatoes 175g packet Primo Short Cut Rindless Bacon 1 ripe avocado, halved, peeled, stone removed 1 tablespoon light sour cream 2 tablespoons chopped chives Method Wash potatoes, scrubbing dirt from skin if necessary. Pat dry with a paper towel. Using a fork, pierce each potato 8 times. Place potatoes around outer edge of microwave turntable, spacing evenly. Cook for 6 minutes on HIGH (100%) power. Turn potatoes over. Cook a further 5 to 6 minutes on HIGH (100%) power or until potatoes are firm when tested with a skewer. Wrap each potato in foil. Stand for 7 to 10 minutes. Dice bacon. Place onto a microwave-safe plate. Cover with 2 sheets of microwave-safe paper towel. Cook for 3 to 4 minutes on HIGH (100%) power, or until bacon is light golden (bacon will become crisp after cooling). Mash avocado with sour cream. Add bacon and chives and mix well. Unwrap potatoes and cut a cross in top of each. Gently squeeze potatoes open. Spoon avocado mixture onto potatoes and serve.

I really enjoy avocadoes and bacon together. I just bought some to make my famous guacamole, which is never the same twice. We just picked up a recipe that calls for adding bacon to it. Putting it on top of a potato would make a complete meal, very filling and fresh.

Hi Gardengerty, yes it taste lovely the way I have explained this in the recipe as you know I really love my cooking and enjoy making different things to give my family and friends a different variety of food.

I would love this but without the avocado I think this is the only thing in this world I do not like , I like everything else though pal and will give it a go , I love baked potatoes and make them for Ross and hubby quite often as they are a really good healthy food xx

thanks for the recipe here is naother recipe for you Baked Potatoes With Avocado and Bacon Topping 1¼ hours 10 min prep Change to: servings US Metric 4 large baking potatoes, scrubbed 3 slices bacon, chopped 1 medium avocado, peeled and mashed 1 garlic clove, crushed 1/4 cup sour cream 1 teaspoon lemon juice 1/8 teaspoon Tabasco sauce (optional) 1/4 red bell pepper, seeded and cut into thin strips Preheat oven to 400º. Pierce potato skins in several places with a fork. Bake potatoes about 1 hour or until tender. Heat a heavy skillet over medium high heat. Add bacon and cook 4-5 minutes stirring frquently until crisp. Drain bacon on paper toweling. Combine mashed avocado with remaining ingredients, except peppers and bacon in bowl. Split baked potato down the middle. Divide avocado mixture between potatoes and top with peppers and bacon. hope you liked it

Super great sounding recipe ...I love baked potatoes and I love avocados ..I will love to try this recipe ...I am always looking for easy recipes and this one I can just cook up my bacon with breakfast and have it to use for dinner with my baked potatoe ..thanks

That sounds lovely I'll have to try it I really like avocado's and had never thought of combining them with a jacket potato. Though I have had them in a baguette which is also really nice they must go well with bacon too.
