Cheesy Mixed Vegetable Bake

1 (16-ounce) package frozen mixed broccoli, carrots, and cauliflower
1 (4-ounce) can chopped pimento, drained, divided
1 (10-ounce) can golden mushroom soup
1/3 cup sour cream
1/4 teaspoon pepper
1 (3-ounce) can french-fried onions, divided
1 cup shredded Swiss cheese, divided
Preheat oven to 350F. Grease a large casserole dish. Combine vegetables, half of the pimento, soup, sour cream, pepper, half of the fried onions and half of the cheese in a bowl; mix.
Spoon mixture into a prepared casserole. Bake for 20 minutes.
Sprinkle remaining fried onions and cheese on top of casserole. Bake casserole for 5 minutes longer.
Remove casserole from oven. Sprinkle with remaining pimento. Let stand for 5 minutes before serving.

I really love chesy recipes but can't eat too much cheese because i get migraine if i have too much dairy produce. But now and again i do treat myself to a cheese based dinner and thanks again for your lovely recipes. I am collecting themon file. My son willlike this one.
