Do you have to keep egg in the fridge?

I noticed that my mother and father in law sometimes keep eggs out on their counter. Is that safe? I've always thought you were supposed to put them in the fridge. And when they dye eggs at easter time then they will leave them in a basket on the counter. I never eat eggs from their house.

the store bought eggs that are to be stored in the fridge are usually up to 5 months old when you buy them. Due to the washing of the eggs these must be kept in the fridge unless your temperature in the house is cold enough. If you have farm fresh eggs it is a different story. when a chicken lays the egg there is a protective coating that she puts on it, this coating is called the "Bloom" the bloom seals off the egg from bacteria that would otherwise get in through the pores and make the egg rancid. These eggs with the bloom attached do quite well when stored on the counter. The only difficulty might be in you have an especially hot room that you keep them in and you do not use them up quickly enough - the eggs won't necessarily spoil, but they may incubate! If you wash the bloom off of your eggs, you can create an artificial bloom by wiping some mineral oil all over the egg. (I would refrigerate those though)

In the 'olden' times they did not have refrigeration. But on the other hand they raised most of their own food. Usually had a passel of children, maybe some farm hands, so they probably used them up quickly.

My father in law has chickens so he gets his eggs from them. But I still think they should go in the fridge after that.

I thought everyone refrigerated their eggs. I don't think it's safe to leave them out too long. I would only leave a couple out an hour or so at the most if a recipe called for room temp eggs.

Hmm, I never thought people kept eggs out. My grandmother keeps eggs out but only for the day, like if she is going to bake a cake or make cornbread.. I always thought if you kept it in the fridge it would keep them fresh... Very interesting topic...I have to come back to see the response in this...

ha. i always keep mine in the fridge. i guess it depends on the weather. maybe if they eat the eggs within a couple of days and it'snot too hot then they'd be ok. But yeah, generally i think it's safer to keep them in the fridge.,
