I have quite a few favorite recipes that I tend to prepare, as well as consider to be some of the best dishes that I had ever made for my other half & me for dinner. I limited it down to just two recipes that I just love! I have tweeked them to make them some-what my own. And I know that each time I make these dishes that both my other half & me love them each time.. And are never disappointed whenever we are finished eating! I hope if you decide to make these recipes that you enjoy them as much as we do in our own household! . . Thanks for allowing me to share! xx "Bacon & Egg Hash brown Casserole." Ingredients are as follows: - 6 large eggs - 1 cup of shredded cheddar cheese - 1 pack of bacon, cooked but also crumbled - Six weiners all diced up finely - 1 package of frozen hash browns - 3 tablespoons of oil - salt & pepper to taste Directions are as follows: - Firstly cut up your bacon in to small pieces. Then cook it in a skillet, when bacon is close to being done.. Quickly put in the diced up weiners you had cut up.. And fry both the bacon & weiners together for a little bit longer. Afterwards drain the excess fat from the pan in a strainer. Then set aside. - Place the amount of vegetable oil in a non stick skillet & heat over medium heat. - Pour the hash browns in to the pan & press them down evenly. - Fry these for about 10 minutes or until the underside has turned brown & is crispy. As carefully as you can flip the hash browns over. If you can't flip them in one piece, don't panic.. When flipped, just push them down evenly in the pan all over again. - Make six openings in the potatoes, evenly spaced of course. Then add some butter in each opening. And drop each egg in to each hole. - Cover & allow to cook for a while. After you can see it's been cooking for a while just sprinkle some salt & pepper over dish. Then cover again until the eggs are set. - After eggs are set, sprinkle the bacon, & also the cheese evenly over the top. Cover once again until cheese has begun to melt & eggs are set. - Then toast some slices of bread or bagels on the side. And serve this casserole on top of the bread or bagels. Serve then ENJOY this delicious dish! . . "Potato Pancakes." Ingredients are as follows: - 2 - 3 cups of finely shredded raw potatoes - 2 eggs (very well beaten) - 1 tablespoon of salt - 1 - 2 tablespoons of pepper - 2 tablespoons of flour - 1 cup full of grated onions or however many your heart desires Directions are as follows: - First grate the potatoes, then transfer to a large strainer. Make sure to drain the potato water from the potatoes after grating. After this transfer to large bowl. Then grate the onions on the side & add the onions to the bowl of potatoes. - Then mix all of the rest of the ingredients on the list by tablespoonfuls on to a well greased skillet. - Cook these for 4 - 5 minutes on each side, or at least until brown. You can make them thin or thicker. We make them thicker, so if you decide to do this it could take longer for the potato pancakes to cook fully. - After potato pancakes are all cooked, then serve with sour cream on the side! ENJOY! xx
