What's for dinner?

I am sitting here getting ready to leave work and I have no idea what to make for dinner. My son told me last night that he wanted mac and cheese with whatever I made for dinner. I told him no problem (I swear that kid could live forever off of mac and cheese and hot dogs). The only problem is I just don't know what to make. Any ideas on what goes with mac and cheese.

We usually serve the Mac and cheese as a main course, but add veggies, (like carrots, broccoli, and cauliflower) to it or on the side. Chicken or fish is always a good main entree. Tuna or chicken salad sandwiches may even team up well with it. I've even been known to throw leftover chili in M&C for something different! Anything to stretch out the dinner dollar. LOL! Do you make your M&C from scratch or use Kraft? That makes a difference, too, I think, as to what you pair it with. I have some left over mac and cheese in the fridge I thought I'd reheat and serve with broiled brats. (wish the snow was melted off the grill!!) Whatever you come up with, I'm sure it will be wonderful! good luck with your dinner plans. :)

LOL. For me mac and cheese IS dinner! But if you want to make it a bit more interesting, try making a baked potato and salad to go with it, adding some hamburger meat and chopped tomatoes to the mac and cheese (though your son might not like that, in which case, serve it on the side!) or perhaps a garlic chicken piece (just sautee the chicken with whole garlic cloves adn a bit of oil). Hope you figure something out!
