Tuna Fish Páté

Ingredients:
2*200g tuna fish,drained and flaked
50g butter
1 tablespoon olive oil
Finely grated rind and juice of 1/2 lemon
25 g fresh white breadcrumbs
Put the tuna,butter and oil and work to a smooth puree.Transfer to a bowl , add the remaining ingredients and beat well to mix.
To freeze: spoon into a rigid container,seal,label and freeze.
To thaw and serve: thaw in the container at room temperature for 4 hrs.,then spoon into a serving dish and garnish with lemon wedges and parsley.
