Help, my husband did the Easter grocery shopping. He bought a 22 pound ham for 6 adults. I am going to have ham coming out of my ears. What can I do with all of the left-over ham? Any suggestions of how I can use it up? Any great recipes that I can try, because lord knows I will have enough to try a dozen new recipes. (The guest coming for dinner never take anything with them, even when I insist.)

Besides freezing, breakfast foods and sandwiches, you can use in different soups. I like ham and bean or ham and potato. Since you said you have a hard time getting guests to take it home, maybe try a different approach with them. Instead of offering, just package up what ever you want them to take and hand it to them as they leave. By asking if they want some you give them the option of saying No, if you just give it to them (as if it's a gift) they'll have a harder time refusing.

Ham is such a universal thing! Freeze some for using later, put it in soups and stews, have sandwiches, put it in scones (cheese and ham scones...yummy!), make a cheese sauce, put some ham into it and pour on some fresh pasta, use it in an omelete....and there is so much more you can do with it!

No worries, I used to do all kinds of stuff like this when I used to work in the catering industry a few years ago. Let us know what you decide to do with all the leftover ham, it'll be very interesting to see what you do.

Ham Salad is our favorite way to use up some ham. We can never hav too much in this house I swear! You can freeze it in baggies and pull out portions as needed also. It freezes up nicely. For Ham Salad: 1 lb. leftover ham - diced 1 stalk celery or 1/2 tsp. celery seed 1 sm. onion - diced 1 cup mayonnaise 1/2 cup sweet pickle relish OR dill relish 1/2 tsp. salt (I omit this if it's a fairly salty ham) 1/4 tsp. black pepper I put my ingredients in the blender as I have no food processor anymore but you can make it as "musy" and fine as you want. If you prefer a chunkier ham salad don't even bother mixing it in the blender or food processor. Mix all ingredients together. Refrigerate and make sandwiches with it. Great on rye bread, toasted, with lettuce and tomato.

Usually when I have a lot of left overs when it comes to a lot of the meat I had prepared. I tend to use them to prepare a casserole. I find casseroles are so very easy to put together. And there are a variety of different casseroles one could make so that they don't end up getting all to boring. I know that I have been in the same boat as you are in currently. Where I have had all to much left over ham or even turkey. And I have used the meat to create casseroles & had found that the meat was gone in a matter of days. Which had helped to free up a lot of space in my refrigerator. I enclosed a few casserole recipes, along with a calzone recipe that I have made in the past when I had left over ham or other type of meat.. And they we're a big hit in my household! If you decide to try any of these dishes I had enclosed.. I hope you enjoy them as much as we have around our house! . . Thanks for allowing me to share! xx "Ham & Egg Breakfast Casserole." Ingredients are as follows: - 3 cups of diced ham - 1/2 of a lb of grated cheddar cheese - 4 cups of cubed up french bread - 6 eggs - 4 tablespoons of flour - 4 cups of milk - 1 1/2 teaspoon of dry mustard - 4 tablespoons of melted butter - salt & pepper to taste - dash of tabasco sauce Directions are as follows: - First layer the bread, & the ham & cheese in a greased baking pan. Then beat all of the rest of the ingredients together in the order given. And pour these remaining ingredients over top of the bread, ham & the cheese. Then refrigerate all of this in a covered pan. And then bake this in a 300 degree oven for roughly 1 hour. Then serve & ENJOY! xx "Potato & Ham Casserole." Ingredients are as follows: - 1 can of undiluted cream of potato soup - 1 lb of ham cut in to bite size pieces - 1 package of frozen shredded potatoes - 1/4 of a cup of parmesan cheese - 1 1/2 cups of shredded cheddar cheese - paprika - salt & pepper to taste Directions are as follows: - Combine the shredded potatoes, the ham, the soup & the salt & pepper in a large bowl. Then spoon this mixture in to a baking dish. Bake this at 400 degrees for 25 - 30 minutes. Then take the casserole out of the oven & sprinkle with the cheese & the paprika & bake this for an additional 5 minutes or until the cheese has melted. Then serve & ENJOY! "Ham & Cheese Calzone." Ingredients are as follows: - 2 cups of diced, fully cooked ham - 2 tubes of refrigerated pizza crust - 6 ounces of sliced pepperoni - 1 cup of ricotta cheese - shredded parmesan cheese - 2 cups of mozzarella cheese - spaghetti sauce (meatless) - dried basil (optional) Directions are as follows: - First unroll one of the pizza crusts on a greased baking sheet. Then spread half of the ricotta cheese on half of the dough lengthwise. Then sprinkle with half of the pepperoni, the ham, as well as the mozzarella. Then sprinkle with the parmesan cheese, & the basil if desired. Then fold the unfilled side of the dough over the filled half & press the edges together firmly to seal. - Repeat this as well with the remaining crust & the ingredients to full the calzone. - Bake this in a 400 degree oven for 30 - 35 minutes or at least until they have turned a golden brown. - Then serve with some warm spaghetti sauce. You can also put the spaghetti sauce in with the other ingredients as well. As we tend to do this instead.. And it makes the calzone taste even better when you put the spaghetti sauce in.. Whichever you & your family prefer! Serve & ENJOY! xx

WOW.. You got ham didn't you.. Was he trying to tell you how much he likes ham or what.. I love ham so it wouldn't be a problem for me but after about a week of eating it everybody else might get alittle tired of ham.. I say slice it into serving that are managable for your normal meals and freeze most of it.. From there you can take it out as you want it and decide whats for dinner, breakfast and such.. But sandwiches, soups, casseroles are ways you can't go wrong.. You can slice, dice, and leave in chunks to freeze.. I can see alot of great ham meals coming your way.. Tammy

Last time i had a whole bunch of good left over ham in the fridge i used it for sandwiches, and mixing with scrambled eggs and cheese for breakfast. Ham is a pretty versatile meat i found, but i'm afraid i don't have any recipes that come to mind.

You can probably make a nice bundle of ham sandwiches & put them into the freezer. Usually, when you take one to work in the morning, it's still nice & fresh & 'cold' by the time lunch time comes around. I do that - even when buying cold cuts, I make a bunch of sandwiches & put them in the freezer.

That is definitely a lot of ham unless everyone is so hungry that they eat the whole thing. You can send some leftovers to me if you would like. :-) I am not sure what me and my parents are having for dinner today. LOL You could probably make ham sandwiches with the leftovers. I am not sure of what other creations you can make but maybe looking in a cookbook can give you some ideas. How come the guest never take anything with them? My parents always give me leftovers if they have any and I am willing to take. :-)

Well, I could give you my address and you can send it to me. I will take care of it for you.lol. Just kidding. Others have already suggested my favorite of hot ham and cheese sandwiches. How about putting some ham on a bagel with cheese and maybe an egg. It makes for a nice breakfast.

We are going to have alot of ham leftover too- I can't wait. I love hot ham sandwiches-- I love cold ham sandwiches.. My mom just told me that you can freeze cooked ham also-- so what you don't eat why not freeze it and then get it out a week or so later for another ham dinner. A couple of my favorite meals are Ham soup- with lots of veggies and noodles-- You need the hambone and drippings for this one. Scalloped potatoes and ham- so yummy! There are tons of recipes for this online. Homemade macaroni and cheese with ham and onions! I love this one-

I think you could try chopping up the ham and adding to a few eggs to make ham omelet. Otherwise you could roll ham up to make cones, stuffed with cheese of your choice and secured with a toothpick as an appetizer. instead of using bacon, ham quiche would be nice too. alternatively, slice ham and use it in cream pasta.

Well, first of all, you can freeze the bone and some of the meat for use in soups later on (potato soup is really good with ham!). For more immediate use, think sandwiches! A nice devilled ham sandwich is delicious. Just use your food processor to chop about a cup of ham. Add two or three tablespoons of mayonaise and half a tablespoon of mustard (your choice). A dash or two of paprika and mix. You can spread this on any kind of bread and it is so delicious!
