Do you know some recipes with leftovers?

Sometimes we have a lot of leftovers in the refrigerator and we don't know what to do with them. It's a waste to trash them, but it's not enough for all the family. What can we do with them?

What kind of leftovers do you have? You can use meat, vegetables, pasta, eggs, rice, whatever, in casseroles, soups and meatloaf. Make meatloaf with ground beef or sausage or turkey or any combination of those, then add chopped or minced leftover vegetables, pasta, boiled egg and/or cooked grains or whatever you have, about a half cup to a pound of ground meat. Season it and top with whatever you usually use. For casseroles, just match flavors that you usually would, like tomatoes, garlic and onions or noodles, mushrooms and meat and the same with soup and stew. I make what I call leftovers soup, but I save odds and ends of leftover vegetables, meat, pasta and grain in the freezer until I have enough, then I thaw, mix them and simmer for a few minutes. It nearly always turns out really good.

Leftover spaghetti noodles are excellent in scrambled eggs, with parmesan cheese over them. A lot of leftovers make great sandwiches (like mashed potatoes or casseroles). Leftover veggies can be added to pasta with chicken and olive oil for a whole new meal.

If it is meat left over I freeze it until I have enough for a good sized stew or orzo dish. Pork gets made into chow mein, chicken will make a stew or some orzo as will beef. I don't have a problem with leftover veggies since I am the only one that eats veggies so I make just what I wil eat. Leftover macaroni gets made into a salad and leftover spagetti i use like lettuce in a salad. Leftover potatoes can be used lots of ways depending on your likes and dislikes.
