Tomato Soup Cake

The idea of a tomato soup cake isn't that radical, really. It provides moisture, much like applesauce would, and the acidity of the tomatoes reacts with the baking soda and makes the cake light and airy. You wouldn't know there was tomato soup in there unless you were told. Not too different from a mayonnaise cake if you think about it... Anyway, what I want to know is, does anyone have a recipe for a tomato soup cake that they love? I'm looking for one, and so far I've never had one that I liked enough. But I keep thinking it's a brilliant idea (for the reasons I explained above) and want to try again. So if anyone has a tried and true successful recipe, or any ideas to stir into the pot, I'd be much obliged. :)

My mom used to make that for us all the time when I was a kid. I wish I had her recipe. I've tried it using theapplesauce cake recipe, and addinga teaspoon of baking soda to the tomato soup just before putting it in, but it wasn't the same, its close, but not quite!

I wonder if other tweaks would help it get closer? I love applesauce cakes, though, and I hadn't actually thought about just substituting tomato soup with applesauce even though they both serve the same purpose. I'll have to try that sometime, thanks!

I think possibly tweaking the spices would make it almost perfect.

This is an old recipe from my grandmothers cookbook. I can't say that I have ever made it sorry. 1 cup of sugar 1 lg. T. Butter 1 can condensed tomato soup 1-3/4 cup Flour 1 tsp. each baking soda & powder 1/2 tsp. each cloves, cinnamon, nutmeg 1/2 cup chopped walnuts 1/2 cup raisins Special instuctions: Bake in a tube pan that has been well greased and floured. Cream butter and sugar. Add tomato soup and mix until smooth. Combine flour, soda, powder, spices and stir into tomato soup mixture. Add nuts and raisins. Bake at 350° until done. Frost with Cream Cheese Frosting.

Judging purely by the ingredients list, it almost sounds exactly what was mentioned above... an apple spice cake with tomato soup instead of applesauce! Thanks so much. I will have to try it sometime soon, and I'll get back to you (if I remember!) on how it tasted when I do. :D
